Kyle’s Original- Sausage and Kale Stew

Ingredients:

  • 1 lb of Italian sausage (sweet or hot depending on your taste)
  • 2 Russet potatoes peeled and diced into small pieces, and rinsed and patted dry (think potatoes O’Brien)
  • 2 bunches of Italian kale, slice intro ½ wide strips
  • 2 cloves of garlic, minced
  • 1 small white onion, diced
  • Pinch of chili flakes (omit if using hot sausage)
  • 2 tablespoons butter (unsalted preferably)
  • 4 cups of chicken stock
  • 1 cup heavy cream
  • Salt and pepper
  • Lemon Zest
  • Olive oil

Preparation:

  • In a large soup pot or dutch oven over medium to med/high heat
  • Brown sausage and crumble, set aside
  • In the same pot add a teaspoon of olive oil and fry potatoes until lightly brown and crisp, set aside
  • Add onions to pot and cook until softened
  • Add garlic and chili flakes if using and saute for a moment
  • De-glaze pot with chicken stock, bring to boil
  • Add kale and cook until tender
  • Remove pot from heat and let cool for a minute or two
  • Stir in cream, butter, salt and pepper to taste
  • Return sausage and potatoes to pot, mix everything together
  • Serve in bowls and sprinkle with a bit of lemon zest to liven it up
  • Serve with crusty bread to sop up the soup
