Kyle’s Original- Sausage and Kale Stew
Ingredients:
- 1 lb of Italian sausage (sweet or hot depending on your taste)
- 2 Russet potatoes peeled and diced into small pieces, and rinsed and patted dry (think potatoes O’Brien)
- 2 bunches of Italian kale, slice intro ½ wide strips
- 2 cloves of garlic, minced
- 1 small white onion, diced
- Pinch of chili flakes (omit if using hot sausage)
- 2 tablespoons butter (unsalted preferably)
- 4 cups of chicken stock
- 1 cup heavy cream
- Salt and pepper
- Lemon Zest
- Olive oil
Preparation:
- In a large soup pot or dutch oven over medium to med/high heat
- Brown sausage and crumble, set aside
- In the same pot add a teaspoon of olive oil and fry potatoes until lightly brown and crisp, set aside
- Add onions to pot and cook until softened
- Add garlic and chili flakes if using and saute for a moment
- De-glaze pot with chicken stock, bring to boil
- Add kale and cook until tender
- Remove pot from heat and let cool for a minute or two
- Stir in cream, butter, salt and pepper to taste
- Return sausage and potatoes to pot, mix everything together
- Serve in bowls and sprinkle with a bit of lemon zest to liven it up
- Serve with crusty bread to sop up the soup
