As Summer drags on, cooking can often just mean grilling, but when your friends are grilling burgers and dogs they’ll need a little accompaniment. This month Kyle takes us on an adventure into the land of appetizers. It’s a 5-minute dish that even your kids would enjoy making, but it’s probably just the touch of elegance those grillers didn’t even know they needed…
Smashed Burrata with Jam and Pistachios
Ingredients
- 8-12 ozburrata cheese
- 1/3-1/2 cup fig jam or preserves –fig jam is the go to on this, but you could experiment with peaches or other flavors.
- ½ cup shelled and salted pistachios, chopped
- olive oil, just a drizzle at the end
- fresh basil and/or thyme
- honey, olive oil, sea salt, or black pepper
- ciabatta bread, crackers, or pretzels
Instructions
- Pull the burrata out of the fridge an hour or two before serving. It should be room temperature for the best flavor; too cold and it just doesn’t work
- Arrange the balls of burrata on a serving plate. Use that nice one you never have the right occasion for. Use a spoon to gently smash the cheese
- Swirl the jam into and around the smashed burrata
- Top with salted pistachios
- Other possibilities include a light drizzle of olive oil or honey, or maybe a sprinkle of sea salt or black pepper.
- Serve with ciabatta, crackers, pretzels, or any bready thing that strikes your fancy.
