Kyle’s Baked Trout (or Salmon)

Kyle picking up ingredients for this month’s recipe. (You might just opt for the fish market.)

With Spring upon us Kyle is spending more and more time out on the lake fishing.  Trout season is almost here as well, so he’s taking this opportunity to show you his preferred method of cooking his catch…

Ingredients: 

  • Two cleaned whole rainbow trout or 1 large filet of salmon
  • 2-3 tablespoons of butter
  • 3 Cloves of Garlic finely chopped
  • Parsley finely chopped, about a half cup worth
  • 1 lemon zest and juice
  • Pinch of brown sugar (don’t use much, it can easily overpower the fish)
  • Pinch of dried dill to taste
  • Pinch of chili flakes
  • Foil lined baking sheet, and more foil to cover fish while cooking

Preparation:

  • Preheat oven to 375° F
  • Place foil over a baking sheet
  • Rinse fish and pat dry
  • Place fish on baking sheet covered with foil
  • Season fish with salt, pepper, dill, brown sugar and chili flakes
  • Zest lemon over trout, squeeze juice into a separate container, make sure no seeds are in juice
  • Put a pat of butter on each piece of fish
  • Sprinkle garlic and parsley over butter
  • Cover fish with foil, seal edges
  • Bake fish at 375° for 10-15 minutes on average, based on thickness of fish
  • Open foil and make sure fish is cooked through (flakes easily)
  • Once fish is cooked turn on broiler and broil for about 2-3 minutes, which will caramelize the butter and seasoning on the fish
  • Drizzle lemon juice over fish and serve.
