Drew’s Kitchen- Parmesan Baked Cod

This is one of the simplest RestOfNewsletterrecipes Drew’s had in quite a while; just five ingredients gives a goof-proof way to keep oven-baked fish moist.  Mary Hoppe of Pewaukee, Wisconsin shared the original… “My mom is one of the best cooks in the world, and she shared this recipe with me.  It’s a favorite!”  And you know if a recipe comes from Pewaukee, it’s gotta be good!Parmesan-Baked-Cod_EXPS_SDDJ17_27981_B08_04_2b-1-696x696

Ingredients:  

  • 4 cod fillets (4 oz each)
  • 2/3 cup mayonnaise
  • 4 green onions, chopped
  • ¼ cup grated Parmesan cheese
  • 1 tsp Worcestershire sauce

Preparation:

  1. Preheat oven to 400°. Place cod in an 8-in. square baking dish coated with cooking spray.  Mix remaining ingredients; spread over fillets.
  1. Bake uncovered until fish just begins to flake easily with a fork, 15-20 minutes.

Prep time 0:20, Total time: 0:40, Serves 4
