Kyle’s Kitchen- Strawberry Balsamic Pasta Salad

If this recipe seems familiar, you might be thinking about Kyle’s Strawberry and Feta Salad from 2023.  The strawberries, feta, and balsamic vinegar make such a unique, fresh, and vibrant flavor combination that Kyle had to share it with you again, but trying it with pasta instead of a spinach base give another way to be creative.  And of course it’s a salad, so you can get even more creative by trying walnuts, croutons, or other variations to make it your very own.

Ingredients

  • 2 cups quartered strawberries
  • 4 oz goat crumbled cheese
  • 2-3 cups arugula (or substitute spinach)
  • 1 pound rotini pasta (or substitute farfalle or fusilli)
  • 1/3-1/2 cup balsamic vinaigrette

Instructions

  1. Bring a large pot of water to a boil, once boiling add 2-3 teaspoons of salt. Add pasta, and cook according to directions on package (10-12 minutes). When done, rinse under cold water, then drain thoroughly.
  2. While pasta cooks, cut your strawberries into quarters.
  3. Crumble goat cheese, set aside until ready to assemble.
  4. In a large bowl, add drained pasta, strawberries, goat cheese, arugula and balsamic vinaigrette. Toss well to combine.
