The heat is on in Portland, and who wants to spend their Spring slaving over a stove? Kick back with a cool, cool salad!
Salad Ingredients:
- 1 Package of baby spinach
- ½ – 1 pound of strawberries, washed, sliced or diced
- Crumbled feta (as much as you like)
- Crushed roasted almonds
- Salt and Pepper to taste
Dressing Ingredients:
- 1-2 tablespoons of olive oil
- 1 ½ tablespoons of balsamic vinegar (I use an italian herb vinegar)
- Zest and juice of 1 lemon (watch out for seeds)
- 1 grated garlic clove (find a big one)
- 1 grated ½ of a shallot
- Pinch of red pepper flakes
- 1 teaspoon of dijon mustard
- 1 pinch of salt
- 1 pinch of pepper
- 1 small splash of water (helps all ingredients emulsify into a nice dressing)Crumbled feta (as much as you like)
- Crushed roasted almonds
- Salt and Pepper to taste
- Put all dressing ingredients in a sealed jar and shake vigorously

Variations
Consider adding chunks of chicken, or ideally, the grilled salmon that Kyle raves about.
Servings: 4 servings with 1-2 tablespoons of dressing per serving. A little bit goes a long way!
