Kyle’s Kitchen- Strawberry and feta salad with balsamic vinaigrette

The heat is on in Portland, and who wants to spend their Spring slaving over a stove?  Kick back with a cool, cool salad!

Salad Ingredients:

  • 1 Package of baby spinach
  • ½ – 1 pound of strawberries, washed, sliced or diced
  • Crumbled feta (as much as you like)
  • Crushed roasted almonds
  • Salt and Pepper to taste

Dressing Ingredients:

  • 1-2 tablespoons of olive oil
  • 1 ½ tablespoons of balsamic vinegar (I use an italian herb vinegar)
  • Zest and juice of 1 lemon (watch out for seeds)
  • 1 grated garlic clove (find a big one)
  • 1 grated ½ of a shallot
  • Pinch of red pepper flakes
  • 1 teaspoon of dijon mustard
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 small splash of water (helps all ingredients emulsify into a nice dressing)Crumbled feta (as much as you like)
  • Crushed roasted almonds
  • Salt and Pepper to taste
  • Put all dressing ingredients in a sealed jar and shake vigorously

Variations

Consider adding chunks of chicken, or ideally, the grilled salmon that Kyle raves about.

Servings:  4 servings with 1-2 tablespoons of dressing per serving. A little bit goes a long way!
