Kyle’s Kitchen- Chicken Tzatziki Skewers with Feta Fries and Tahini

Spring is in the air, and it’s almost… almost… time for light, easy recipes you can enjoy outside with friends.  Kyle’s here to get you started with these Tzatziki Skewers and Feta Fries, and guess what?  They’re light and easy… the friends are up to you!


Ingredients
Skewers

Feta Fries

  • 4 russet potatoes, cut into ¼-inch-thick matchsticks
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 cup mixed herbs – dill, basil, parsley
  • 1 tsp lemon zest
  • 1 clove garlic, grated
  • 2 tbsp toasted sesame seeds
  • 1/2 cup crumbled feta cheese

Garlic Tahini

  • 1/2 cup tahini
  • 3 tbsp lemon juice
  • 1-2 cloves grated garlic
  • 1/4 cup cold water

Instructions

  • For the skewers, mix the olive oil, shallots, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper together in a bowl. Add the chicken and toss. If time allows, let sit for 10 minutes to deepen the flavor.
  • Preheat the oven to 450° F.
  • Thread the chicken onto each skewer and arrange on a baking sheet. Bake 20-25 minutes, until lightly charred and cooked through.
  • For the fries, toss the potatoes, olive oil, garlic powder, cayenne, and pepper together, then spread in an even layer on a sheet pan. Bake for 15-20 minutes, then flip and bake for 15 minutes more.
  • In a bowl, combine the herbs, lemon zest, garlic, sesame seeds, and feta. Toss the fries on the sheet pan with the feta. Then, season with salt.
  • For the Tahini, combine ingredients in a blender and blend until smooth.  Add water to thin as desired.  Season with salt to taste.
  • Serve the chicken and fries with Tzatziki sauce and tahini. Enjoy!
