Scallop and Shrimp Kabobs

Ingredients: 

  • ½ pound scallops
  • ½ pound large raw shrimp (peeled and deveined)
  • (3) tbsp. Olive Oil
  • (3) Tbsp Lemon Juice
  • (2) large cloves garlic (minced)
  • (3) Tbsp minced parsley
  • ¼ dried basil, crushed
  • 1/8 tsp pepper
  • ½ pound mushrooms

Preparation:

  • Add shellfish to olive oil, lemon juice, garlic, parsley, basil, and pepper. Marinate 30 min.
  • Alternate scallops, shrimp, and mushrooms on skewers without crowding. Brush with marinade.  Broil or grill 4 inches from source of heat for 4 minutes.
  • Turn skewers, brush with margarine and continue to cook about 3 minutes longer or until scallops and shrimp are opaque.
  • Serve with rice
